Rice Pudding 2

  • 2 Eggs
  • 1/2 C. Sugar
  • 2 C. Whole Milk, scalded
  • 1 1/2 C. cooked Rice
  • 1 C. Raisins
  • 1 tsp. Vanilla
  • 1 tbsp. Cinnamon

Combine eggs and sugar. Slowly add scalded milk. Whisk until well mixed. Add remaining ingredients, except cinnamon. Pour into a greased 1 quart casserole dish. Mix well. Sprinkle with cinnamon. Set casserole into a shallow pan. Fill the pan with hot water, 1 inch deep. Bake 1 1/2 hours at 325 degrees.

Serves 4 to 6.
