Rhubarb Pie

  • 1 1/2 C. Sugar
  • 3 tbsp. Flour
  • 1 tbsp. Butter, softened
  • 2-3 well beaten Eggs
  • 3 C. chopped Rhubarb
  • 1/2 tsp. Nutmeg (optional)

Blend sugar, flour, nutmeg, and butter. Add eggs and beat smooth. Pour over rhubarb in a 9″ pie crust. Top with pastry cut into fancy shapes. Bake at 450 degrees for 10 minutes, then at 350 degrees for an additional 30 minutes.
