Potato Pancakes

Potatis Pankaka

  • 1 1/2 C. Potatoes, cubed
  • 1 slice Onion
  • 1/4 C. Milk
  • 2 Eggs
  • 4 Parsley Sprigs
  • 1/4 C. Flour
  • 1/2 tsp. Baking Powder
  • 1/2 tsp. Salt

Grate 1/2 cup potatoes and onion in blender. Add eggs and milk. Grate for 20 seconds and add another 1/2 cup potatoes and parsley. Add flour, baking powder, and salt. Add remaining potatoes through opening and grate 20 seconds. Pour 1/3 cup on a hot griddle in butter for each pancake.

Serve with fried ham or pork and lingonberries.
