Danish Spice Cake

  • 1 C. Raisins
  • 1/3 C. Butter
  • 3/4 C. Sugar
  • 1 Egg
  • 1 tsp. Vanilla
  • 1 tsp. Baking Soda
  • 1 1/3 C. Flour
  • 1/2 tsp each: Allspice, Cinnamon, Nutmeg, Clove, and Salt

Boil raisins in 1 1/2 cups water. Drain raisins and cool. Reserve 3/4 cup liquid to use in cake. Cream butter and sugar. Add egg, vanilla, and raisin liquid. Beat well. Sift dry ingredients. Add to mix. Stir in raisins. Bake at 350 degrees for about 30 minutes.
