Ovenbaked Lutfisk

Lutfisk is dried ling, which has been soaked in lye (to make it soft and palatable) and then boiled

  • 3 lb. Lutfisk
  • Butter
  • 1 tbsp. Salt

Soak lutfisk in cold water for 1 to 3 hours. Drain. Place the fish, skin side down, in a buttered deep baking dish. If desired, first remove the skin. Frozen fish may be cooked in its wrapping. Sprinkle the fish with salt and cover the dish with foil. Cook 200 degrees in the oven for 30 to 40 minutes. Pour off the liquid and serve the fish hot with boiled potatoes, peas, mustard sauce, or lutfisk sauce, melted butter and allspice or white pepper.
