Grandma’s Rice Pudding 2

  • 2/3 C. Rice
  • 2 3/4 C. Milk
  • 1/3 C. Sugar
  • 1/2 C. Raisins
  • 2 Eggs, slightly beaten
  • 1 tsp. Vanilla
  • Cinnamon

Combine in a saucepan. Bring to a boil, stirring frequently. Reduce heat and simmer 10 minutes, stirring occasionally. Mix in eggs and vanilla. Pour into a buttered 1 quart casserole dish. Slowly stir in rice mixture, mixing well. Sprinkle cinnamon on top. Place in a pan of hot water and bake for 20 to 30 minutes at 375 degrees.
