Grandma’s Baked Stuffed Fish

  • Large Whole Fish
  • Salt
  • Flour
  • Salt and Pepper
  • Salt Pork

Stuffing

  • 2 C. Bread Crumbs
  • 1/2 tsp. Salt
  • 1/2 tsp. White Pepper
  • 1/4 C. Butter, melted
  • 1 tsp. Onion Juice
  • 1 tsp. Parsley
  • 1 tsp. Capers

Sprinkle fish with salt. Combine stuffing ingredients and fill cavity of fish. Skewer edge together. Cut gashes on each side across the fish. Place a strip of salt pork into them. Place fish on a greased baking sheet. Dredge with flour, salt, and pepper. Put sheet into a baking pan with piles of pork fat. Bake at 350 degrees for 15 to 20 minutes per pound. Serve with a dill sauce.

This is a very good recipe for a whole fish. We didn’t have it often because Grandpa only like to catch fish, not eat fish. Of course, since he didn’t like fish, “the Boys” were reluctant to try it.
