Finnish Cakes

  • 3/4 C. Softened Butter
  • 1/4 C. Sugar
  • 1 tsp. Almond Flavoring
  • 2 C. Flour
  • 1 Egg White, slightly beaten
  • 1 tbsp. Sugar
  • 1/2 C. Finely Chopped Blanched Almonds

Mix butter, 1/4 cup of sugar, and flavoring thoroughly. Work in flour with your hands. Chill. Preheat oven to 350 degrees. Roll 1/4 inch thick. Cut into strips 2 1/2″ x 3/4″. Brush tops with egg white. Sprinkle with mixture of sugar and almonds. Carefully transger to ungreased baking sheet. Bake 17 to 20 minutes.

Makes about 4 dozen.
