- 3 C. Sugar
- 2 C. White Vinegar
- 6 C. Beet Juice
- 1 tsp. Whole Cloves
- 1 tsp. Whole Allspice
- 1 tsp. Whole Cinnamon
Cook beets, skin, and slice. Save beet juice. Add above ingredients and heat. Put in sterilized jars and seal. Boil 20 minutes.
1 peck of beets bakes 12 pints of beet pickles.
